While updating the Kafka versions for the connector I had to update several
dependencies (testcontainers, docker-java) to get my setup (podman) working. I
also noticed that many of the dependencies of the connector are out of date
and/or don't match the versions that Flink is using.
Using the Synk scanner there are no current critical CVEs (now that Kafka
client is at 3.9.1) but it would be good to update the other dependencies of
the connector to keep things current.
