The release scripts in flink-connector-shared-utils (release_utils) fail or
misbehave on macOS and with some Maven setups. Found while preparing
flink-connector-kafka 5.1.0:
* {{_init.sh}} exports {{SHELLOPTS}}, which breaks {{bin/mvn}} on macOS; the
README works around it by unsetting the Maven variables
* setting {{MVN}} has no effect
* {{stage_source_release.sh}} derives the wrong default project name
* {{update_branch_version.sh}} commits every changed file, not only the poms
* bsdtar adds {{._*}} files and extended attributes to the source tarball
* the scripts carry on when Maven cannot read the project version
* {{release_snapshot_branch.sh}} reads the version without {{MVN}}
* {{update_japicmp_configuration.sh}} uses GNU-only {{sed -i}}
