The SQL Kafka page never mentions Upsert Kafka, and the Dynamic Kafka SQL page
reads like a general alternative although it is only meant for topics that move
between clusters at runtime and builds on the experimental DynamicKafkaSource.
This adds a short "Which Kafka connector to use" section to the Kafka page,
links Upsert Kafka back to it, marks Dynamic Kafka as experimental with a hint
to use the Kafka connector otherwise, and corrects "Flink CDC format" to "CDC
format" in the changelog source section.
