Right, this is actually a problem with open-ejb snapshots not being
published. So its pulling down an old version of openejb which does
not reflect the changes for the new EnvironmentType element.
Currently the workaround is to install the openejb jars built from
Geronimo 1.1 to your local Maven 2 repo.
