### Description
- [ ] Here are some details about my PR, including screenshots (if

This PR enables the extension of GobblinMCEPublisher in order to customize
the fileList that the file metrics are calculated for. This allows for
customization of the file metrics that is calculated and can be sent to
different GobblinMCEs.
