For the sake of progress and getting convenience binaries out there, I
think we should focus on a few target operating systems for this next RC.

- OSX BigSur
- Debian10

I mention  Debian10 because this would be the "official" Heron image in
docker hub and I've tested the build.   I have not verified the Ubuntu
20.04 or CentOS7 in a while.  I have some time this weekend to upgrade the
build (if needed) for BigSur and create a new release candidate.

Let me know what you all think.
