Sorry for jumping in so late but we found an issue with CTAS and refreshing vended credentials in S3 that we just fixed on main <https://github.com/apache/iceberg/pull/12504>. Given that refreshing vended credentials was released with 1.7.0 I think it would be good to do another RC and include this fix in order to make CTAS work with refreshing creds.
