Good point, but I don't think using a newer SDK is any better for the
examples:
* Oldest LTS fits the most users
* We don't need anything from newer versions
* Ignite uses .NET Core 2.x right now
* Upgrading to .NET Core 3.1 or .NET 5 is a single line change anyway
(update TargetFramework in csproj)

Am I missing something?
