Maybe it would be simpler overall to just deprecate and remove {{--sort-args}}
and instead be sure to reexport {{SORT_ARGS}} if set? Then we just document the
use of {{SORT_ARGS}}. Anyone tweaking the sort stage is probably going to be
comfortable with using env vars.
