Update: I've pushed a first cut of the UI I have in mind (screenshots in the PR description). The idea is to mark every *modified* field with a gutter on the left, so you can see at a glance which fields you've changed and tell a "modified but empty" field apart from one that's "unmodified / unset". Today those two look the same.
