Let's take a step back and start from a fresh download of jboss as 7.1.1 and
attempt to deploy using the embedded derby database with openjpa.
So...
unzip jboss
add the open jpa module
start jboss to confirm the jpa module deployed
stop jboss
copy over juddiv3.war to deployments folder
start jboss
confirm it deploys and is accessible via http://localhost:8080/juddiv3
from there, we can switch to your preferred database provider (note: there are
currently issues with oracle db) and then deploy juddi-gui (and configure it,
jboss7's web service urls are slightly different than the normal ones).
