Summary: upgrade NPMs due to security issues

Knox UIs use multiple insecure versions of NPMs.
`npm audit` would highlight the issues. I found many using dependabot.
These UIs in particular:
* knox-homepage-ui
* knox-token-management-ui
* gateway-admin-ui
