I saw that documentation,and it made me the
impression that Gramadoir is pretty much hard wired.
It - for example- does not seem to contain any support
for affixes/prefixes. This is IMHO a basic need even
for German, and inevitable for Hungarian.
Neither could I find support for word
types like noun, verb, and the like.
Myriam worked on the french approach with gramadoir
i'll soon release her report (in french)
If you read some french, you can have Myriam's blog that states the

The machine may look completely language-independent for you,
but I do not see this - see above.
Gramadoir is a rich tool and its rules based on regular expressions make
it powerfull
But i agree that it needs some time to discover all the parts
But it worth a look and a study, even if not sufficient (to decide) it
contains many good ideas
