Concerning the "Default Language for Documents" you seem to be right,
but "Format"->"Character" contains an entry named "Gaelic
(Scotland)". I
guess that is what you were looking for. (Using OOo 2.0.2)
Format Character does have the option. I would be looking for being
able to write whole documents in Gaelic and thus the "Default
Language for Documents" requires to be updated.
