Stupid question - one that I always forget the answer to....

How do you put an ampersand into some data in an xml packet?

eg. <menu label="Maps & Boundary Signs" data="68"></menu>

When I wrap the complete XML in a CFXML I get an error because of this, 
but can't for the life of me remember how to work around this. (other 
than typing "and")
