You ask for the most useful improvements between 5 and 7. Goodness, that's a
LOT. You have CFMX 6, 6.1, and 7, each of which added more stuff. And beyond
that, there are the subjects of "what's new" and "what will happen to your
code".

I don't know of any one document that tries to attest to all of that, and
there may well be articles in the CFDJ or elsewhere that have attempted to,
but fortunately for you Adobe has put together a site aggregating their
articles for helping ease such a migration:

http://www.adobe.com/devnet/coldfusion/migrating.html

There are many useful articles there, and perhaps for you the order would
be:

Migrating Your Application to ColdFusion MX: Make your transition from
ColdFusion 5 to ColdFusion MX trouble-free.
http://www.adobe.com/devnet/coldfusion/articles/migrating.html

Making a Good Thing Better: Introducing ColdFusion MX 6.1: Ben Forta reviews
the most important features in ColdFusion MX 6.1.
http://www.adobe.com/devnet/coldfusion/articles/intro_61.html

And then a set of ones on CF7:

Introducing ColdFusion MX 7: Get an overview of the hot new features in
ColdFusion MX 7-the most customer-driven release to date.
http://www.adobe.com/devnet/coldfusion/articles/intro_cf7.html

Ben Forta's Blackstone Tour Report: Hear all about the new ColdFusion
version and its developer-driven feature set.
http://www.adobe.com/devnet/coldfusion/articles/blackstone.html

There are still more on migration, specifically, for both CFMX and older
apps:

Migrating Apps to ColdFusion MX 7: Read about important changes in
ColdFusion MX 7 and how to address them in your applications for migration.
http://www.adobe.com/go/cfmx7_migrationdoc

Tips for CFMX-ifying ColdFusion Applications: Update your older ColdFusion
apps to the MX version and improve maintainability and functionality.
http://www.adobe.com/devnet/coldfusion/articles/updating_legacy.html

ColdFusion MX Migration Overview: Identify all the areas you should consider
in developing your ColdFusion MX migration plan.
http://www.adobe.com/devnet/coldfusion/articles/migration_overview.html

That's not all that's on that page, but it gives you a taste and should
certainly help get you started.

If WDDX is causing you problems, you could always use XML or JSON

we don't use session scope for variable storage here for some reason ... not
my decision !
