The one that usually gets banded around is TextMate
[http://macromates.com/].  There's a CF plugin for it (syntax
highlighting, tag completion etc) called CFTextmate
[http://www.cftextmate.com/].  I soley use a Mac now for CF
development, and use TextMate is perfect for the job.  Sure, you don't
get some of the integration (debugger etc) as you do with the
Eclipse-based IDEs, but I prefer a more lightweight editor.

Sure, there's an app that comes with OS X, and it's called 'Terminal'
:)  As you say, it's a *nix system under the hood (specifically
evolving from a BSD/NextStep background), so (almost) anything you can
do on a *nix box, you can do on OS X.

I have that lot set up on my Air, except I use TextMate instead of
Eclipse.  My advice is to install Apache and MySQL via MacPorts
[http://www.macports.org/] - it's by far the easiest way.
