What version of CF are you using. Not sure about now, but previous versions have a habit of keeping the whole file in memory for quite a long time after a cffile operation. So if you get a bag load of uploads within a few minutes of eachother, you might start running low on resources. You might want to also check what swapfile space you've got set in the system properties settings. I never allow windows to choose the space, but instead I always set it myself. Generally windows doesn't allocate any virtual memory space on any disk but the primary... which is a bit pants. If you've got plenty of disk space kicking about, allocate chunks of each drive as swapfile.
