if the mailserver was unavailable.  in mail.log it would typically say
something like "MailCode error=20" or something like that.

apart from invalid emails - what other reasons might cause it to go in the
unsent folder (i.e. and then be able to be sent at a later date by putting
back in spool)?

There is a custom tag for this somewhere called
ResendUndeliverableMail.cfm, which one of my clients has on his site,
scheduled to fire at 2 am every day, IIRC.

He's happy with it.
