you run CF under a user that has network access, then all the websites can
be on another server.
in IIS on each server, you can set the .cfm mappings to the server with the
dll on it.

Probably a really duncey question, but as I've never had to do it, and don't
have that much to do with IIS, then I'll ask it anyway.

We've always ran .cfm pages from the same server that Coldfusion is
installed on.  Is it possible to put .cfm pages on another web server
(running IIS), and get IIS to make the call to CF on the other server?
