I've looked at Adalon before, does anyone use it and recommend it?

If you're talking about frameworks and Java, then you probably mean the 
Struts/MVC model.  In which case, yes you can apply MVC to almost any 
programming language.  For CF's take on MVC you probably want to look at 
MachII (http://www.corfield.org/index.php?event=machii.main)

If you want a design and analysis tool that supports MVC have a look at 
Synthis' Adalon (http://www.synthis.com/products/adalon/overview.jsp) 
I'm not sure whether it directly supports MachII yet, but it certainly 
does Struts and previous version of Fusebox [please don't start a 
fusebox do I/don't I thread].
