I don't know IIS at all, but a cheap way would just be to create an app/ 
directory, move all of the roundcube stuff in there, then create an indexhtml 
file in your roundcube direcotry that says:

<META http-equiv="refresh" content="1; URL=https://YOUR_URL/roundcube/app";>
