Based on an IM chat with Simon, it appears that doing a custom DocValues Source subclass is ultimately more work than developing my own custom cache per-segment, initializing the initial data out of DV on-disk. The challenge (for me) is to figure out how to do that. I'll look at FieldCache & DV internals for inspiration.
