This document is describing the old style of building recommenders.
The current best practice is to use an off-line analysis and then deploy the
resulting item similarities to some sort of recommendation engine. My own
preference is that this recommendation engine be an actual text search engine,
but there may be other opinions around.
I think that going into lots of detail about the preference model isn't helpful
to newcomers who would like to get going as quickly as possible.
