I'm not quite sure what kind of poster do you need.
If you want to make your students curious about OpenOffice.org and if
you are able to tell them more about it, you might use something like
these booth banners:

They are attached to Issue 54041, but if you are interested I could send
you the EPS files that could be printed directly.
For more eye catching posters please have a look at the contributions to
the wallpaper contest at opensourcepal.org from last spring:

Even if the resolution of these images is probably too low to be printed
in larger scale, some of them are great as posters as well:
