You can use uberjar.bundle=false to exclude a dependancy.
Eg: <properties><uberjar.bundle>false</uberjar.bundle></properties>

Here is an overview of the issue:
---------------------------------------------------------------------
Key: MPUBERJAR-6
Summary: Don't include dependencies marked with a given property
Type: Wish
Status: Open
Priority: Major
Original Estimate: Unknown
Time Spent: Unknown
Remaining: Unknown
Project: maven-uberjar-plugin
Assignee: Jason van Zyl
Reporter: Jon Strayer
Created: Sun, 23 May 2004 5:15 PM
Updated: Tue, 20 Jul 2004 7:11 AM
Description:
My project uses libaries for testing (jUnit, MockObjects) that aren't needed when
deployed. It would be nice if the uberjar goal could not include dependencies that
were marked with a property (like testTime).
