Implemented SELECT transformer to project fields from parser

This is a simple PR to add FieldTransformation capabilities to the parsers
allowing basic projection. There are definitely better ways to implement this
as reflected in the comments, but those would need a wide ranging refactor of
FieldTransformations, so I've decided to shelve that for now.
