Let me know if the fix for SSHD-265 is sufficient.
It should be fairly easy to do the following now:

sshServer.setFileSystemFactory(new VirtualFileSystemFactory(rootDir));

The SCP and SFTP clients will see rootDir as / and will not be able to go in
parent directories.
