Regarding the where to put resources issue:
I'm not sure we need an extra element for that. You can use <directory> to
specify from where the directory should be copied. You don't really need to
specify where they are put, just make sure your source directory structure of
your resources matches the structure you want inside the DMG.
Let's say you want a file "README.txt" to be placed inside the "docs" directory
of your DMG.
I would put README.txt in src/main/resources/docs/README.txt and then configure
the plugin like this:

<fileSet>
<directory>${basedir}/src/main/resources</directory>
<includes>
<include>docs/README.txt</include>
</includes>
</fileSet>
</additionalResources>
