Mappings ignore defineStatements

Rather than use paths like "/usr/share" in mappings we are supposed to use
%{_datadir} (which incidentally should be read from rpmrc which the plugin does
not seem to do).
Unfortunately, specifying these values as "defineStatements" does not have the
desired effect for mappings - the specfile is created as you would expect but
resources are not copied correctly to destinations such as
%{datadir}/%{name}/bin.
