Capability of adding resource to application bundle

I may be asking something that can be done already. I would like to add some
zip files to the application bundle. I understand that any depend jar will be
added automatically, but I would like to for the ability to add other files
into the application bundle.
I currently have a project in which updates and the base installation are
provide as zip. I have a Mac version that used a self-running jar to expand the
zip files, and would like to keep doing this. These zip files are built using
Maven Assembly and include both the dependency jar, and a set of files and
directory need to run the application.
