I use X-Chat for IRC, but some people tell me it's too geeky. :-)

Gaim is very impressive. It is starting to become the "standard" by which 
othe FOSS IM clients measure. For example, the two biggest clients for Mac 
OS X (Fire and Adium X) both use the Gaim libraries.

I think Gaim has an important role to play in helping people migrate to 
FOSS. You can't convince an AIM user to use Chatzilla because all his 
friends use AIM. But you can convince him to use Gaim. And once he has 
Gaim, the door is open for him to start using Jabber or IRC.

So I'm cheering for Gaim. :-)
