As far as I know, if you want to manually validate the builds you can approve them in QATrack at the temporary address http://qatrack.ooodev.org or anyway you can file an issue saying what you would like to be released as OOo 3.3.0; the one for the Italian build is http://openoffice.org/bugzilla/show_bug.cgi?id=116604 With the new policy, if you don't manually validate the builds they will anyway get automatically tested and released unless you oppose to it (so it's opt-out rather than opt-in).
