Don't know if this is relevant let along helpful, but we were on CentOS for many years and, when it died, we moved to Alma.

I'd be surprised if Java 21 was included in the CentOS 7 package repositories. You'll most likely need to install it manually, and set JAVA_HOME appropriately in the environment you're using to start NiFi.
