Christian,

Yeast is a living organism that can multiply given the right circumstances. 
While that might also occur in a brew proces, it is unlike to be applied. Yeast 
cultivation could be a separate manufacturing process to ensure that the end 
product doesn't have any contaminations.

It should be possible to calculate the expected yeast residue, or 
yeast-extract, based on the input parameters (output of the previous task + 
yeast), but I haven't seen a formula so far. 

As far as OFBiz Manufacturing goes, in current feature you can set a 
deliverable product on a task (as a by product), but an expected quantity or 
ratio cant be set.
