Look at the top of the conceptField.tag<https://source.openmrs.org/browse/%7Ebr=trunk/OpenMRS/trunk/webapp/src/main/webapp/WEB-INF/tags/conceptField.tag?r=19402>file. "showAnswers" is the conceptId that contains the answers you want to restrict to. "includeDatatypes" is a comma delimited list of datatype names to restrict to.
