You don't need to generate them. They are just a graphic cache for embedded objects that allows OOo to display the object without loading it. If the replacement image isn't available OOo will load the object as soon as it must be displayed. The "mimetype" stream is not a part of the document, it's an extension that allows to detect the MimeType of the file on Unix desktops. This stream only contains the same MimeType you have in the manifest.xml.
