Usually that would be decided by interest or 'the one little bug that
itches you'.. ;-)  After all for the larger projects you may need a
considerable time to get familiar with them.

The other option is to make your choice by the size of the project,
smaller ones should be easier to get into and to handle.

The smallest ones I know (because I have to work in them :-) are
- starmath (the formula editor) and
- lingucomponent (handles the OOo linguistic at the lowest level,
  dependency wise speaking)
In the latter one for example the language guessing could still be
improved.  Of course there are others small projects as well.

If you like to get familar with one off the larger projects, like Calc,
Draw/Impress, Chart2, Writer or the framework you should better contact
the respective project leads and ask them where a good starting point
would. Or to tell them what you desperately want to do. ^^
