The point of having a signed PDF is to prevent what you're doing. Nevertheless 
there is a somewhat complicated way to add text by using incremental saving 
(unless the PDF has a "certified" signature), but PDFBox has a bug (part of the 
oldest bug ever) that incremental saving doesn't work properly if the file is 
signed.
