Thanks for the valuable input, [~mkl] .
So, I did the following:
# create a new patch to fulfil "there is a _requirement_ never to provide the
CMS {{signing-time}} attribute": [^patch-PDFBOX-5076_noCmsSigningTime.txt]
# tested it with [^minimum_20210111_115524-PDFBOX-5076_noCMSsigTimesig.pdf] -
Acrobat appears to fine with it
# Updated the issue title accordingly
