You could try to call FontMappers.set() with your own fontmapper. But I don't
think you'll be happy with it. There might be weird effects if your new
fallback font is broken in ways that you didn't imagine.
Btw the reason that PDFBox couldn't find a replacement font is because the font
had the name "CIDFont-F5" instead of the name of the actual font (which was
Yahei Light)
