Alright, I have solved it ;-). As is often the case, if you delve too
much into things you don't see the obvious:
export 
DYLD_LIBRARY_PATH=/Applications/openoffice.org1.9.121/program:/Applications/openoffice.org1.9.121/program/filter
in xterm and everything's fine. Online Help working and no unresolved
symbols.

This is however not an ideal case for simple users, if we don't tell
them do to this. Best would be to have it already integrated, because
simple Mac users don't want to do such things just in order to use a
visual program correctly.
