Fix For: protonj2-1.0.0-M4
Switch to using the slf4j-simple library to provide logging in the test suite
and the examples and remove packaging of the log4j2 and the slf4j binding for
it from the optional folder in the binary archive.
End users of the protonj2 engine or client can add their preferred logging
library using the slf4j bindings of their choice.
