If you use {{pn_logger_set_log_sink}} to set the process default_logger log
sink before creating a transport, the sink context gets overwritten when the
transport copies the default logger. So setting the logging sink early so that
it is used by the entire process is very limited/causes things to fail.
This should work because setting the default logger is documented to be the way
to affect logging for the entire process.
