I don't think making it configurable is the right thing to do. I agree it would be important if the mobile-optimized variants had different content, but they don't. They are simply a different layout.
The one real difference is the navigation available "above the fold" (all the same links are available further below). The mobile versions of course have less horizontal space, so they cannot accommodate all the links we put at the top in the full version. I have a variant with a couple intermediate states for the top nav in the works, and I'm looking at offering a drop-down nav menu so it's easier to get to everything. Note that the full site is already the thing displayed for the ipad, ipad mini, and 10-inch android tablets (in portrait and landscape) and typical 7-inch android tablets (in landscape).
