There is a data model diagram for Roller 4 here: http://rollerweblogger.org/roller/resource/datamodel40.png In Roller 5, look at the weblogger-business module. It has the Manager interfaces that handle persistence and backend "business" logic. To add a new POJO you need to add a new Java class (see org.apache.roller.weblogger.pojos) and add new methods to a Manager interface, or possibly add an entirely new Manager for a set of related new POJOs.
