Indeed, I think most of the documentation content would go in the website via 
gh-pages.
The wiki would only contain small how-tos for developers that are not of 
interest to the general public (e.g., how to commit, how to setup dev 
environment, how to publish the website).
Nothing forbids us to put them in the website anyway, however [~mmorel] is the 
strongest supporter of having a wiki, so I will let him argue in favor of it.
For me, both solutions are equally fine. On one side the wiki is simpler to 
edit. On the other, having everything in one place and a single way to publish 
content is a plus.
