[DISCUSS] Remove all connector version change log in doc

Hi all
We bring connector change log in doc since
https://github.com/apache/seatunnel/pull/3128.
But As time goes by, the change log has not been iterated. As a
result, the information displayed on the page is outdated and missing
a lot of content.
Until we find a better solution, I suggest removing this part of the
documentation.
