I would like to implement ST_FlipCoordinates
([https://postgis.net/docs/ST_FlipCoordinates.html)] in Apache Sedona.
This function returns a version of the given geometry with X and Y axis
flipped. This is useful for fixing geometries which contain coordinates
expressed as latitude/longitude (Y,X).
