Hi all,

We will plan to drop the Java 8 support starting from Sedona 1.8.0. This
means: 1. We will compile our source code using JDK 11. 2. We will start to
use new APIs provided by Java 11, in the source code. 3. Users will no
longer be able to run Sedona on any Java 8 environment.

Currently, Databricks, Microsoft Fabric, AWS Glue / EMR, GCP all provide
hosted Spark service with Java 11 in at least 1 LTS version.

By using Java 11, this will unblock us to use the latest release of
GeoTools, Apache SIS, and being able to release to Snowflake (SedonaSnow).
